          Ice cream is a frozen dessert usually made from dairy products such as milk and cream and fruits and other ingredients also added with flavours. Most varieties contain sugar or artificial sweetner and artificial colourings which gives tempting look and flavours added.The meaning of ice cream varies from one country to another such as frozen custard,frozen yoghurt,sorbet,gelato express different varieties and styles.             
          The history of Ice cream dates back to very early in 15th century.Ice cream is probably Chinese origin and was introduced to Europe by Mark Twain after his travels to china. In the Persian Empire,they pour grape juice concentrate on snow bowl and eat during hot season.The snow saved in the cool keeping underground chambers known as yakhchal.In 400 B.C Persians invented a special chilled food made of rose water and vermicelli which was served during summer.Ancient civilization have served ice for cold foods for thousands of years.Arabs were used the milk as a major ingredients to make ice cream.They sweetened it with sugar rather than fruit juices and make it as commercial production.
         With increase popularity,more ideas developed and ice cream production expanded.Jacob Fussel built the first ice cream industry in the 1800.New flavours are being made every day,no one has ever counted the exact number.The three most popular flavours are vanilla,chocolate and strawberry.America stands as the top ice cream consuming country in the world.The average Americans eats about 6 gallons of ice cream annually(Make of ice cream).  Ice cream may have the following composition – 50%-60%water,10%-12% sweetner,10%-15% milk fats,1%-2% emulsifiers.
         The modern commercial versions contain little cream and lots of milk products like whole milk solids.Expensive ice creams have less air also called overrun.It is prepared in different styles  - French style Ice creams(cooked egg yolk custard),Philadelphia Style Ice creams(no eggs and without custard base),Gelato – True Italian Ice creams with less air and less sweet,more dense with or without eggs,Semifreddo – literally meaning hot cold – It’s frozen in a form and then sliced once slightly defrosted.
         Other frozen treats  - Ice Milk(lower fat frozen dessert,less milk fat and creamy,lower in calories),Sherbet – Classic sherbet made with fruit juice,sugar,water or wine,sometimes milk,buttermilk,egg white.Sorbet – light dessert made without milk,eggs or gelatin,Granita – Italian flavoured shaved ice and ice crystals mashed with a fork and can be eat on their own.
